The Culinary, Hospitality, Applied Management Program, a districtwide program housed at Kennedy High School Central High School District, is slicing right into learning as they master various cooking and baking skills to start.
“Our Culinary Cuisine and Techniques class has been studying and cooking seafood,” explained teacher chef instructor Michael DiGiovanni. “They have been learning about a variety of different seafood delicacies from round fish to flat fish as well as shellfish such as mollusks, crustaceans and cephalods. In the kitchen, the students have developed the skills to shuck clams and learned how to make clam chowder.”
Students have also learned to peel and devein shrimp to make shrimp cocktail. “These skills will help them as they work further into the seafood unit to prepares dishes such as crab cakes, lobster bisque, po’ boys, frutti de mar and pan sautéed black bass.
The culinary class also had the honor to host their first catering event of the year,” added chef instructor, Meredith Ober
The CHAMP program also had two successful days at the concession stand at the school’s first home varsity football game of the year, as well as Homecoming on Sept. 30.
